Not Your Mother's Meatloaf



Ingredients
  • 2 lbs ground beef (80/20)
  • 2 cups oats
  • 2 eggs
  • 8 oz colby jack cheese, small cubes
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 8 oz tomato sauce
  • salt
  • pepper
  • paprika
  • garlic powder
  • onion powder
  • Casey's special meatloaf sauce  :)
  • 6-8 strips of bacon
Making the Meatloaf
  • In a large bowl, combine ground beef, oats, eggs, cheese, onion, bell pepper, tomato sauce
  • sprinkle generously with seasoning and spices
  • In a 9x13 glass baking dish, greased, form mixture into a loaf down center of dish
  • form a trough down middle of loaf
  • pour special sauce in trough
  • place bacon strips over top of loaf
Making Casey's special meatloaf sauce
  • 1/2 cup of brown sugar
  • 1/4 cup of Ketchup
  • 1 tbsp Mustard
  • 1 tbsp Worcestershire sauce
  • other condiments can also be used, such as Heinz 57, honey, BBQ sauce, whatever you like

  • Bake uncovered at 350* for 1 hour
  • drain off excess grease

And I like to serve this with green beans and macaroni&cheese.
